I had recently become a member of VegWorcester.com. This is a wonderful community promoting Vegetarianism and Veganism in the Worcester county area in MA. We are currently raising funds to bring out a new dining guide that shows a list of all Vegan and Vegetarian restaurants, and grocery shop in the area. As a part of the fund raiser program, we were hosting a bake sale in a farmer’s market in the locality.
Me, I have never been part of a bake sale. Heck, I have not so much as baked a cookie in my life from scratch (Those store bought Pillsbury ones don’t count). But still in all my infinite enthusiasm, I went ahead and promptly put down my name. The best part of this effort is to make them Vegan. Thus began my journey through to world of Vegan baking, which I must say, needs a lot of talent, because it isn’t just butter, sugar and eggs.
After a lot of research and some thinking from my part, I settled on the following recipe from this blog. I took the recipe, and omitted the chocolate chips, coconut (as I didn’t have them at hand) and added in nuts for a variation. I made two batches, the fist one obviously being the sad little ones, that didn’t look anything like cookie, but taste amazing. The second one is the plain one with just Oats.
