Sauteed Tomato and Veggie Ciabatta Sandwich

Sautéed Tomato and Veggie Ciabatta Sandwich


  • A can of diced tomatoes
  • Half a cup sliced onions
  • ¼ cup peas
  • Jalepenos 10 slices
  • Olives 6 – sliced
  • 1 tsp cumin
  • Salt to taste
  • Ground pepper two pinches
  • 1 tsp oil
  • Mint Chutney – Optional
  • Parmesan Cheese – Optional

Putting it together

  • In a hot pan, put the oil and cumin together
  • When the cumin seeds are a bit brown, add the onions and sauté
  • Once the onions lose their colour, but still retain a crunch, add the tomatoes and peas
  • Add salt, chilli powder, and pepper and cook till tomatoes are tender
  • Switch off and add Jalapenos and Olives.
  • To assemble, cut the Ciabatta bread breathwise in to two
  • In the bottom piece, scrape out some bread to make a small pit
  • If required, Spread the mint chutney in this pit just to coat the bread
  • Fill the bread with the Tomatoes and Veggies
  • Top it with Parmesan cheese and press together with the top
  • Grill it in a Panini maker just enough for the bread to heat up, or microwave the bread for 1 min and serve
